Zucchini Recipes

Zucchini is a very beneficial vegetable, it contains vitamins such as vitamin A, C and K, riboflavin, folate and even minerals. It is also high in water and fiber. On top of that zucchini is a great way to add some vegetables as side dishes, appetizers, pizza, pasta, salad and more.

There are many zucchini recipes online that shows how you can include this vegetable in every meal. As a topping on pizza with prosciutto, red pepper and mushroom, in a lot of pasta dishes but also grilled and fried with different seasonings. There are also many zucchini breakfast recipes online such as zucchini pancakes, chocolate-zucchini bread and zucchini scrambled eggs that is very easy to make. Just cook sliced zucchini in oil and garlic then mix eggs together with, green onions, salt, pepper and milk, pour it over the zucchini. Stir until the eggs becomes scrambled and then it is ready to be served with bread or avocado.

The zucchini pasta can be made quickly. Add spaghetti, sliced mushroom, peas, garlic and sliced zucchini in a large pot with water then heat it up to a medium heat. Boil, until the pasta is cooked, around 7-10 min. Lastly add parmesan, heavy cream and season the pasta with salt and pepper to your liking.

Fried zucchini is an easy side dish and appetizer. Start by preheating the oven to 220 degrees C. Then dip the sliced zucchini sticks in beaten eggs to then roll it in the bread crumb/parmesan/flour/salt/pepper mixture. Place all the stick on a baking sheet sprayed with cooking spray. Place it in the oven for around 20-25 min or until it has reached a golden brown color. It can easily be served with a dipping sauce of your choice.

The zucchini shrimp is easy to make and healthy to eat and a plus for seafood lovers. Melt butter in a skillet in medium heat. Add shrimp, red pepper flakes and a bit of garlic, have it on medium heat for a few minutes til the shrimp turn pink. Then add the lemon juice and chicken stock, and season it all with salt and pepper. Let it cook for a minute or two. Serve it by garnishing it with parmesan.
